Yum Naem Khao Thod

Crunchy rice salad with fermented sausage

is a salad from the Isaan region where the rice is marinated with curry paste and other seasonings and then fried crispy. The rice is often shaped into small balls before frying, which are then broken up before serving. The rice is then mixed with fresh herbs, chilis, peanuts and “Naem”, a fermented sausage. The whole thing is then seasoned with chili flakes, lime juice, fish sauce and palm sugar.

This salad is also known as “Naem Khao Thod” ( ), “Khao Thod Naem” ( ), “Khao Thod Naem Khluk” ( ), “Naem Khao Khluk” ( ) or “Naem Khluk” ( ). In English it is also known as “Red Curry Rice Balls”.
