The
"Yum Makuea Yao"
(ยำมะเขือยาว) or sometimes just “Yum Makuea” (
ยำมะเขือ) is a salad with grilled or fried eggplants.
These are mixed with Thai chilies, shallots, spring onions and chopped herbs before being dressed with lime juice, fish sauce and palm sugar. Long Asian or
smaller European eggplants are used for the salad, but not Thai eggplants.
