Shiitake Mushroom Salad

ยำเห็ดหอม Northeastern Thailand

is a salad from Isaan. Shiitake mushrooms are briefly blanched and then mixed with various herbs. The salad is then dressed with a dressing made from fish sauce, lime and bouillon cubes and finally garnished with toasted rice flour and chili flakes.
