Fried Tofu with Bok Choy

is a simple stir-fry dish in which firm tofu is fried together with bok choy. The tofu is first fried with garlic and yellow bean paste before the bok choy is added.

All ingredients are then deglazed with a mixture of soya sauce, fish sauce and oyster sauce. The dish can be made vegetarian by omitting the oyster sauce and fish sauce or by finding suitable vegetarian substitutes for these sauces.
