Deep-fried Papaya Salad

“Som Tam Thod” ( ส้มตำทอด ) is a snack in which deep-fried papaya strips are served with a sauce made from garlic, chilis, fish sauce, palm sugar, dried prawns and peanuts. The unripe papaya strips are coated in a mixture of starch and rice flour before being deep-fried.

This is a deconstructed and reinterpreted Som Tam Thai. Depending on the recipe, other ingredients such as prawns are also deep-fried or vegetables such as snake beans or sweetcorn are added to the sauce.
