or “Sai Krok Isaan” ( ) is a sausage made from pork and rice that is usually fermented in the sun. The fermentation creates a slightly sour taste. It is made in the sausage form we are used to, but also in the form of small balls. Sai Krok is often served as a snack together with fresh chilis, ginger, shallots and cabbage.
