“Pad Thai Rai Sen” (
ผัดไทยไร้เส้น) is the name given to a Pad Thai without noodles. Surprisingly, many recipes use little to no
tamarind paste. I think the reason for this is the lack of noodles, which normally absorb and balance out the acidity of the paste.
