Fried Tofu with Minced Pork

is a Thai wok dish with minced pork and diced firm tofu. Both are stir-fried with a paste made from garlic, shallots, galangal, coriander root, Thai chilies and white peppercorns, then deglazed with a mixture of fish sauce, light soy sauce, Golden Mountain sauce and some chicken broth.

Vegetables can also be mixed in as desired. There are also variations where scrambled eggs are added during stir-frying, which is then called “Pad Tao Hu Moo Sap Sai Khai” ( ).
