Stir-Fried Noodles in Coconut Milk with Shrimp

is stir-fried noodles as they are prepared in the “Phak Phanang” district in the southern Thai province of Nakhon Si Thammarat. The noodles are mixed with a sauce made from shallots, chilis, coconut milk, shrimp paste, tamarind and palm sugar. It is usually served with shrimp or other seafood.
