“Pad Mee Khorat” (
ผัดหมี่โคราช) is a noodle dish from Isaan in which noodles are fried together with meat or prawns and vegetables
with various spices and chilli powder. It originates from the city of Nakhon Ratchasima, which is usually simply called “Khorat”. Compared to many other Thai
noodle dishes, it is characterised by a certain spiciness.
