“Pad Ga Prau Moo” (
ผัดกะเพราหมู
) is a stir-fried dish with pork and holy basil. The pork is sautéed with a paste made from crushed
garlic and chili peppers before being deglazed with a mixture of oyster sauce, fish sauce and soy sauce. The basil leaves (bai ga prau) are added at the end .
Sometimes green beans or other vegetables are also mixed in. The dish is served with a fried egg and jasmine rice.
