Or Lam Moo

Stew with pork and eggplants

is originally a Laotian stew, but is also widespread in the north-eastern Thai cuisine of Isaan . The broth is thickened with crushed Thai eggplants and sticky rice and contains pork or pork belly.

The base of the broth is a paste made from Thai eggplants, chilies, garlic, shallots and lemongrass. Vegetables, bamboo shoots or mushrooms and “mai sakhaan”, an aromatic Laotian spice, are often added. Or lam is served garnished with fresh herbs such as dill or coriander. It is typically served with sticky rice.
