“Nam Prik Makuea Yao” (
น้ำพริกมะเขือยาว) is a northern Thai dip made from grilled eggplants, chilis, garlic and fish sauce. All
the ingredients are crushed in a mortar. Depending on the recipe, chopped meat can also be used for the dip. Nam Prik Makuea Yao is typically served with fresh
vegetables and sticky rice. The dip can also be found under the name “Tam Makuea” (
ตำมะเขือ).
