Egg Noodles with Coconut Milk

is a noodle dish made with thin rice noodles that are cooked in a mixture of coconut milk, water, vinegar, and sugar. Red fermented tofu or yentafo sauce is often mixed in to color the noodles pink. A thick coconut gravy seasoned with yellow soybean paste, tamarind, and palm sugar is served alongside and typically contains minced meat, tofu, shrimp, or a mix of these. The dish is commonly served with sliced omelette, bean sprouts, and chives.
