Stir-Fried Eggplant in Soybean Paste

"Makuea Yao Pad Tao Jiaw" ( มะเขือยาวผัดเต้าเจี้ยว ) is a wok dish in which eggplants are stir-fried together with yellow bean paste, garlic, chilli and other spices. At the end, the dish is mixed with horapa basil and the whole thing is then served with rice. Depending on the recipe, the eggplants are also mixed with minced meat during frying.
