“Laap” (
ลาบ) is a salad with minced meat that originally comes from the neighboring country Laos, but has spread throughout Thailand in
different variations via Isaan and Northern Thailand.
Laap from Northern Thailand, also called
“Laap Lanna” (ลาบล้านนา) or
“Laap Mueang” (ลาบเมือง), is prepared with less or no acid at all.
Instead, the aromatic, dry spice mixture
“Prik Laap” (พริกลาบ) is used, which contains among other things cumin, cloves, star anise and long pepper.
Northern Thai Laap is often prepared with raw pork, offal and blood.
