“Laap” (
) is a salad with minced meat that originally comes from the neighboring country Laos, but has spread throughout Thailand in
different variations via Isaan and Northern Thailand.
Laap from Northern Thailand, also called

, is prepared with less or no acid at all.
Instead, the aromatic, dry spice mixture
is used, which contains among other things cumin, cloves, star anise and long pepper.
Northern Thai Laap is often prepared with raw pork, offal and blood.
