"Kuai Tiao Ruea"
(ก๋วยเตี๋ยวเรือ) means “boat noodles”. This dish is a hearty rice noodle soup with pork or beef. Its name comes from the fact
that it used to be prepared on boats in the canals of Bangkok and sold from there. This is why it is also called “Boat Noodle Soup” in English. Pork blood is
usually used in its preparation, which gives the soup its characteristic dark color.
