“Khao Yum Ko Yo” (
ข้าวยำเกาะยอ) is a rice salad from Ko Yo Island in Songkhla Lake in southern Thailand. The rice is mixed with
various fresh herbs, vegetables, rice noodles in coconut milk, prawns, chilli powder and coconut flakes, and dressed with a dressing made from fish sauce or
Budu, galangal, palm sugar, lemongrass and kaffir lime leaves.
