Khao Soi Gai

“Khao Soi Gai” ( ข้าวซอยไก่ ) is a northern Thai noodle soup with chicken, prepared with coconut milk and a spicy aromatic paste. The soup is usually garnished with shallots, pickled vegetables, and fried noodles.

The exact origin of Khao Soi is disputed. Some theories suggest that it came to northern Thailand with Chinese Muslim immigrants from the Yunnan region. Others believe that the dish originated in neighboring Myanmar.

There are various regional variations of Khao Soi, which differ in the type of broth or noodles used. However, the best known is probably the “Khao Soi Chiang Mai” or “Khao Soi Islam” pictured here, which is made with coconut milk and egg noodles.
