Rice Noodles with Fish Curry

"Khanom Jeen Nam Ya" ( ขนมจีนน้ำยา ) originates from Southern Thailand and is a dish with rice noodles and a special curry sauce without coconut milk. The Nam Ya curry paste is characterized by the use of a large amount of fingerroot, and some fish meat is pounded together with the curry paste and essentially incorporated into it. These were often leftovers from the previous day.

The name “Nam Ya” can be translated as “liquid medicine,” possibly because fingerroot is also used in traditional medicine. Classic additions to the curry include fish, seafood, or fish balls.
