Colorful Layered Cake

“Khanom Chan” ( ขนมชั้น ) is a dessert made from tapioca flour, rice flour, mung bean flour, arrowroot starch, sugar and coconut milk. These ingredients are mixed into a dough and then steamed in several layers.

The layers are prepared individually and colored to different intensities with natural colorings such as pandan, kran or anchan. Nowadays, food coloring is also frequently used for this purpose.

In Thailand, Khanom Chan is usually prepared with nine layers, as this number has religious significance. Therefore, this colorful layered cake is also often used for Buddhist ceremonies.

The name of this popular dessert is derived from two Thai words. First “Khanom” (ขนม), which means “dessert”, and then “Chan” (ชั้น), which can be translated as “layer” or “level”.
