Steamed Egg with Shrimp and Mushrooms

“Khai Toon Goong Hed” ( ไข่ตุ๋นกุ้งเห็ด ) refers to a steamed dish with eggs, mushrooms, spring onions and dried and chopped fresh shrimp. This mixture is seasoned with fish and soy sauce and then steamed in hot water vapor until it sets. In “Thailand: The Cookbook” the dish can simply be found as “Khai Toon” ( ไข่ตุ๋น ).
