Grilled Eggs in Banana Leaf

In Northern Thailand, "Khai Pam" ( ไข่ปาม ) refers to eggs that are grilled in banana leaves. The eggs are beaten and mixed with various ingredients such as fish sauce, Plaa Ra, and chilis, as well as fresh herbs, before being poured into folded banana leaves and then grilled over an open flame until fully set.

Depending on the recipe, the eggs can also be mixed with minced meat, mushrooms, or ant eggs before grilling. Unlike other dishes prepared in banana leaves, the top of the banana leaves remains open for Khai Pam. The dish is also known as “Pam Khai” ( ปามไข่ ) or “Ok Khai” ( อกไข่ ).
