“Jin Thod Song Krueang” ( จิ้นทอดทรงเครื่อง ) is a northern Thai salad with pork belly. The meat is marinated with salt and fish sauce and then fried. The crispy pork belly is then mixed with roasted garlic, shallots, chili peppers and fresh herbs. The whole thing is finally dressed with fish sauce and lime juice as a salad.
