Underwater Chicken

“Gai Tai Nam” ( ไก่ใต้น้ำ ) is a whole chicken that is braised in a marinade of pepper, galangal, lemongrass, dried chilis, shallots, garlic and soy sauce until it is very tender. What makes this dish special is the cooking method, because a bowl of ice-cold water is placed on top of the pot. The resulting condensation of the cooking vapors means that the chicken literally braises in its own juices and absorbs the flavors of the marinade.

This unusual method also gives the dish its name, which can be translated as “chicken under water”. The dish is also sometimes called “Gai Ba Dan” ( ไก่บาดาล ), which means “chicken under the earth”.
