"Gai Hor Bai Toey"
(ไก่ห่อใบเตย) consists of marinated chicken that is wrapped in pandan leaves. These pandan packets are then grilled or
deep-fried, where the meat absorbs not only the flavors of the marinade but also those of the leaves. The dish can also be found under the shortened name “Gai
Bai Toey” (
ไก่ใบเตย).
The dish was first served in the 1980s in a then very famous restaurant, the “Djit Pochana” (
จิตรโภชนา) in Bangkok. It was so popular
that countless restaurants in the city copied it and “Gai Hor Bai Toey” eventually spread to Thai restaurants around the world.
