The origin of Gaeng Ran Juan ( ) probably lies at the court of the Thai king, where it was a popular leftover dish. Leftover meat was simmered again together with a seasoning paste based on lots of shrimp paste and fresh herbs such as lemongrass and Thai basil. Traditionally the dish was prepared with beef, but today the dish can also be found with pork. The name “Gaeng Ran Juan” can be translated as “curry that one yearns for”.
