“Gaeng Phed Pik Gai” (
แกงเผ็ดปีกไก่) is a curry without coconut milk from Isaan. Chopped chicken wings are braised in a spicy broth
made from red curry paste, chilis, galangal, lemongrass and kaffir lime leaves until tender. Thai eggplants are used as vegetables.
