Jungle Curry With Beef and Fingerroot

แกงป่าเนื้อโคราช Northeastern Thailand

is a Thai curry dish from Nakhon Ratchasima province or short “Khorat”, that is prepared without coconut milk. It consists mainly of beef and fingerroot. Both are braised in a spicy broth based on a red curry paste with coriander roots, Thai chilis, garlic, fish sauce and tamarind paste. The dish is served with jasmine or sticky rice.
