Lao Soup from Ubon

“Gaeng Lao Ubon Ratchathani” ( แกงลาวอุบลราชธานี ) is a soup with pork belly or ribs and mustard greens from the province Ubon Ratchathani or short “Ubon” in Isaan. This dish is based on a paste made from chilies, galangal, lemongrass as well as shallots and garlic. It is seasoned with Nam Plaa Ra and garnished with dill, both hints of a Lao origin of the dish.

The soup can also be found under the name “Gaeng Lao Mhu” ( แกงลาวหมู ) and ultimately seems to be a variation of Gaeng Om.
