Crab Curry with Wild Betel Pepper Leaves

“Gaeng Khua Poo Bai Cha Plu” ( แกงคั่วปูใบชะพลู ), or simply “Gaeng Poo Bai Cha Plu” ( แกงปูใบชะพลู ), is a Southern Thai curry dish with crab meat and wild betel pepper leaves. The curry is prepared with coconut milk and is based on a Khua curry paste made from turmeric, black pepper, dried chilies, shallots, garlic, and shrimp paste, among other ingredients.

The wild betel pepper leaves give the dish a slightly bitter aroma and a distinctive flavor note. Traditionally, the curry is served with thin rice noodles.
