“Gaeng Khanun” (
แกงขนุน) is a curry from Northern Thailand, in which unripe jackfruit is cooked together with pork spare ribs or pork
belly. It is prepared with a simple paste made from dried chili, garlic and shallots as well as shrimp paste or Thua Nao Khaep. After the meat has been cooked
until tender, tomatoes and herbs such as Bai Chaplu or Cha Om are added to the curry.
