Gaeng Hung Lay

Pork Curry from Northern Thailand

"Gaeng Hung Lay" ( แกงฮังเล ) is a hearty curry from Northern Thailand. It is usually prepared with fatty pork, spare ribs or pork belly and often contains a large amount of garlic and shallots, but no coconut milk.

The dish originates from neighboring Myanmar, where it is known as “Hin Lay” (ဟင်းလေး). In restaurants with English menus in northern Thai cities like Chiang Mai or Chiang Rai, it is also offered as “Burmese Curry” or “Chiang Mai Curry”.
