is a curry with chicken from Nakhon Ratchasima Province, commonly known as “Khorat”, in northeastern Thailand.
The dish combines the use of coconut milk typical of central Thailand with a jungle curry style from the Isaan region. A paste of dried chilis, galangal,
lemongrass, shallots, kaffir lime leaves, and shrimp paste is dissolved in coconut milk and simmered with chicken, Thai eggplants, and often also Luk Chin and
blood tofu. The curry is typically served on rice noodles.
