Gaeng Buad

Fruit or Vegetables in Coconut Milk

The name "Gaeng Buad" ( แกงบวด ), which is often simply shortened to “Buad” ( บวด ), describes Thai desserts in which vegetables or fruit are briefly cooked in coconut milk. The coconut milk is sweetened with sugar, but also lightly salted.

These dishes are served both warm and chilled. Depending on the recipe, additional ingredients such as pandan leaves are sometimes added to the coconut milk during cooking.
