“Bpet Toon Nam Makham” ( เป็ดตุ๋นน้ำมะขาม ) is a Thai duck stew with tamarind, whose origin presumably lies in Chinese cuisine. For preparation, duck meat is cooked in a broth with soaked shiitake mushrooms and a spice paste made from garlic, coriander roots, white pepper, star anise, and cinnamon. This broth is seasoned with a mixture of fish sauce, light and sweet soy sauce, tamarind paste, and palm sugar.
